The primary ingredient in the production of malt extract is malted barley, but we also use rye malt, oats, wheat and organic malt. Malt extract has a natural content of minerals and Vitamin B plus it is good alternative to sugar, can be used as flavouring and colouring agent. Barlex® is produced in the colour range from light to black and is available in both liquid and powder form
Malt extract can be divided into diastatic and non-diastatic product types. Diastatic malt extract is defined based on inherent enzyme activity. Enzyme activity is used, for example, in baking bread, to produce an airier texture, or when there is insufficient natural enzyme activity in flour. Where enzyme activity in the flour is normal, non-diastatic malt extract types are usually used, and these are also the most commonly used types of malt extract. Barlex® products are used in many industries e.g. the food and beverages industry, for bakery products, and many other purposes.
